Easter Egg Leftovers...Egg Salade

We had a great Easter this year with lots of Easter eggs.  So now, it's time for egg salade.  We love egg salade and I am going to show you our favorite version.  We call it deviled egg salade because it has the same ingredients as our favorite deviled eggs.  The board of ingredients is pretty simple.  You can use your Easter eggs if they have been refrigerated, otherwise regular hard boiled eggs are just fine. 


Having some little hands to help you peel the eggs is a big help.  I love this picture. 



Okay...last sentimental picture.  I promise.



Okay, here are our eggs. 



Now, don't judge me.  This is my egg cutter upper.  You might have one of these things that is all in one piece.  Congratulations, I am really happy for you.  If you don't, you can use the food processor to break down the eggs or you can get your knife out and go to town.  I am going to use my sad and pathetic egg cutter upper and slice the eggs.  I figure that by the time I finish stirring the egg salade up, the eggs will broken up perfectly.

Now, we start adding lots of yummy flavor.  Pinch of salt, pinch of pepper...



sugar....



vinegar...



mustard...



and mayo. 



Give it a stir and now all you need is a spoon.  :-)   But let's make it a sandwich...just for fun.



I am using leftover buns and some fresh spinach.  Roasted red peppers would also be super yummy, but I did not have any. 




I like to use a ice cream scoop to get a perfect round ball of egg salade on the sandwich.



It's lunch time.  Hope you like this as much as we do.  :-)



Willow Cottage Egg Salade

Ingredients:

1 Dozen Hard Boiled Eggs, Peeled and Diced
Salt and Pepper
1 Tablespoon White Sugar
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Dijon Mustard
1/4 Cup Mayo


Directions:

1. In a medium bowl mix eggs, pinch of salt, pinch of pepper and remaining ingredients. Mix until well combined.

2. Chill and serve. Makes 6 1/3 cup servings or 5 1/2 cup servings. Enjoy!

Mexico for Lunch

My kids are hard workers. They play sports, do well in school and help out around the house. By the time the weekend comes, we are all ready for a little fun and a little relaxation. This weekend we invited the kids' friends over for a Mexican inspired lunch and lots of laughs.



I decided to make a favorite of ours, which also happens to be a pretty kid friendly meal.  I made a platter of quesadillas stuffed with peppers, cilantro and cheese.  To go with the quesadillas, I served tortilla chips along with a few toppings so the kids could make their own nachos.  It was a fun meal and all the kids had a great time.



I found this nifty little wire holder.  I added a few half pint canning jars of guacamole, salsa, sour cream, and nacho cheese so the kids could scoop out a few condiments for their tortilla chips.  They loved it and it was so handy.



For fun, I made a tres leches cake.  It was a bit sweet and rich after this meal, but the kids did not care.  They mostly all loved it. Next time I would probably go for a different dessert though.  

Now onto the main attraction.  These are our absolute favorite quesadillas.  They are meatless, but yet still filling and so satisfying.  They are an easy fix for any night of the week and the board of ingredients are simple items that you can find in any grocery store.  I just happened to find these little mini bell peppers in the store.  They were so cute I had to get them. 



To start, we need to cook our bell peppers.  I am going to show you how I cut down peppers.  I start by cutting off the top of the paper. 



The bottom comes off next. 



Then stand the pepper up on the widest end. 



Then cut one side, or one third of the pepper off leaving the ribs and seeds in the pepper.



Then turn the pepper and cut another third off. 



Then cut the last third off.  Your pepper is ready to slice and you can toss the entire middle of the pepper. 



Viola!



Now you can slice the peppers up and get them ready to cook.



I add all the sliced peppers to a bowl and give them a tiny pinch of salt and a generous pinch of black pepper.  Then toss the peppers and seasoning altogether.



In a non stick pan over medium heat add a drizzle of olive oil to the pan and let the pan heat up a bit.



When the pan is heated, add the peppers to the pan. 



Cook them, stirring occasionally until they are slightly charred and softened like this.



Now it's time to assemble the quesadillas.  Start with a few tortillas, the cooked peppers, fresh cilantro and freshly grated cheese.  I am using Colby-Jack cheese.  



Add about 3/4 of a cup of cheese to the tortilla.



Add a few cilantro leaves.  You could also finely chop the cilantro and sprinkle it all over the cheese if you wanted to.  We like the whole leaves.



The trick to the peppers is to make sure you spread them around so you get pepper in every bite.  So yummy.



Top is all off with another tortilla.



Then they go into a dry non stick pan over medium heat.  Keep an eye on them.  They burn so quickly.  I usually make a whole stack of quesadillas and then cook them so I can keep a close eye on them.  Cook the quesadilla on both sides.



When the tortilla is toasted on both sides and the cheese is melted, then remove it from the pan.  I always put the quesadillas right on a cutting board.


Cut it into quarters.



Look at that oozing cheese.



You can see the peppers and cilantro peaking out along the cut lines.  I can't wait to eat this.





Pepper and Cilantro Quesadillas

Ingredients:

3 Bell Peppers, Cut into thin strips
Olive Oil
Salt & Pepper
Fresh Cilantro Leaves
1 Pound Freshly Shredded Cheese
10 Medium Size Tortillas

Directions:

1. In a large bowl, add peppers, a pinch of salt and a pinch of pepper. Toss the peppers and seasoning until the seasoning is well distributed. In a medium non stick skillet over medium heat add a drizzle of olive oil and peppers. Cook, stirring occasionally until peppers are slightly charred.

2. Lay out 5 tortillas. Divide cheese between the 5 tortillas. Add peppers and cilantro leaves on top of the cheese. Cover with a second tortilla.

3. Cook the quesadillas one at a time in a dry non stick skillet over medium heat. Keep a close eye on the tortillas so they do not burn. Cook on both sides.

4. Put the quesadilla on a cutting board and cut into quarters.

5. Serve immediately with your favorite condiments like low fat sour cream, nacho cheese, salsa, guacamole, or pico de gallo. Enjoy! Makes 5 medium sized quesadillas.

A Lazy, Snowy Weekend and Grilled Cheese



We are so busy during the week that when the weekends come along we simply crash. We make sure to get our favorite football game in, we try to cook a few meals together and most importantly we spend time catching up.


This weekend we pulled out a bunch of puzzles and made a date in front of the fireplace to spend a few lazy hours talking, laughing, teasing, listening to some soft music and puzzle building. These hours together are priceless. Check out this post for our puzzle tips.



Since we spend a lot of time around a table of puzzle pieces so when I found this adorable cookie cutter, I knew that i had to have it. I love putting a fun touch on an everyday staple like grilled cheese. And for us, grilled cheese sandwiches with tomato soup is a winter staple so it is fun to give it a tiny make over every once in a while. I just happen to have a puzzle piece cookie cutter to use. This technique is only limited by your imagination. Here is another look at a grilled cheese I served at my son's birthday party.



The board of ingredients for our lunch is so refreshingly simple. I am adding a touch of fresh parsley to our soup because I happen to have some on hand, but it is not necessary at all.



Start with two slices of bread.



Center your cookie cutter in the middle of your bread and press.



Leave the bread cut out in the slice of bread.



Add a drizzle of olive oil to your non stick pan or griddle. I am using a griddle. You can also butter each slice of bread if you wish, but this method is much faster.



Place your bread on the skillet right over the olive oil and let the bread get toasty. Do no do anything until your bread has toasted completely.



When the bread is ready to flip, add two sliced of cheese and top with the second slice of bread.



This is what you wind up with. Make sure you are toasting the bread on a low heat so the cheese has plenty of time to melt before the bread and oil start burning.


Yummy!





Cookie Cutter Grilled Cheese Sandwiches



Ingredients:


2 Slices of Bread
2 Slices of Cheese
Extra Virgin Olive Oil
Cookie Cutter
Griddle or Non-Stick Pan

Directions


1. Cut Bread with cookie cutter.

2. Add a drizzle of oil to a non stick skillet over medium low heat.

3. Place cut bread in pan.

4. When bread is toasted add two slices of cheese and top with the second slice of bread. Flip the sandwich over and toast the second piece of bread.

5. Enjoy.
